Orange salad  is a  classic Sicilian side dish, normally consumed in winter time. May is the last month for  the orange season, so I thought I had to hurry if I wanted to show you this wonderful unusual recipe! To be precise, the original salad calls for oranges, olives and onions, but there are so many versions of the recipe that I prefer more,  plus I put my personal touch in it. We could say this is a revisited Sicilian orange salad, with a Greek influence and Linda’s fantasy! I  am warning you, it’s delicious!

If you have never tasted it, this might look as a risky combination, and I am aware as well that oranges are usually eaten at the end of a meal, as dessert… but you know what? You’ll never look at oranges the same way after trying this salad, to accompany a light second course, as fish, or chicken. If you feel like eating something different and original  which is also rich in vitamins, then this is the right choice. I find it such a great way to bring this fruit on the table and enjoy its nutrient properties and refreshing taste!

The most important thing when preparing this salad is to make sure the ingredients are all good and fresh, as the preparation is very easy and the success of it depends on the quality of ingredients. Let’s say this is more an inspiration than a real recipe, as you can for example substitute walnuts with pine nuts, or feta with goat cheese, depending on what  your cravings are!

Oranges and fennel are embraced by the crunchiness of pumpkin seeds and walnuts, and the feta contributes with a robust taste that goes so well with  the sweetness of balsamic vinegar. It is really delicious, a mix between sour and sweet, juicy and dry, soft and crunchy. And how beautiful is it on a table, so colorful, a joy for the eyes!

Ingredients ( for 2 people)

2 oranges
1 fennel
10/12 black olives
3,5 oz (100 gr.) feta cheese
(1/2 cup) 40 gr. walnuts
2 tbsp pumpkin seeds
a pinch of salt
a pinch of pepper
1/2 tbsp olive oil
balsamic vinegar

 

Method

First, you have to peel off the skin from the oranges with a sharp knife, making sure to take off all the white part.  Cut the pulp in round slices of around 1 cm and put aside.

Wash the fennel. Trim off the stalks, cut off the toughest external leaves and the final part, then cut it in thin slices.

Cut the feta in small cubes and break the walnuts into little pieces.

In a bowl, start arranging the orange slices with the fennel, add the olives, the feta cubes and the walnuts. Sprinkle with the pumpkin seeds, add salt and pepper and the olive oil.

Complete with the balsamic vinegar and enjoy!

A delicious orange salad that combines the fresh notes of fruits and vegetables with the crunchiness of walnuts and pumpkin seeds. All embellished by some feta cheese and balsamic vinegar!

  • 2 oranges

Directions
