Fava beans with eggs – Uova con le fave fresche

Fava beans with eggs is just one of the many recipes that you can prepare with this legume, which is by far one my favorites. Have you ever tried pasta with fava beans? Or the special Apulian fava beans puree?  Everything becomes good with them 🙂 Today’s recipe, in particular, is  really simple and has an ancient taste. It reminds me my childhood holidays at my grandpa’s farm in Sicily, when I was used to peel them after collecting them from the garden.

My grandpa used to tell me that these legumes were very special because during war and in moments of poverty nothing was thrown away. Today we peel and eliminate skins, but before nothing could be wasted, the skins were cut into strings and eaten. Those that we consider today as simple skins are instead boiled and consumed. It is incredible how difficult moments get you to appreciate and enjoy things that you normally consider not important.

What I like about this recipe is that you really need few ingredients to get a tasty dish! Normally you could also eat fava beans with the onions without adding the eggs in the end, but I find eggs to add a nice flavor so I recommend this choice! And don’t forget to accompany it with a slice of rustic homemade bread 🙂

 

Fava beans with eggs – Fave fresche con le uova

Ingredients

7 oz (200 gr) fava beans
salt
black pepper
3 tbsp olive oil
a handful of fresh mint
1 onion
4 eggs

Method

Peel the fava beans and boil them in a large pot  full of water for about 2 minutes, then drain them.

In a large frying pan heat the olive oil and then add the finely chopped onions. Add as well half a glass of water.

Let cook at low heat for about 5 minutes. At this point you can add the fava beans and a sprinkle of salt. Pour 2 or 3 ladlefuls of hot water and let cook for about ten minutes – it depends on whether the beans are large or small.

At this stage, add the chopped mint leaves and some freshly ground black pepper.

Now it’s time to add eggs as well, a pinch of salt and eventually pepper and cover with a lid.

Cook for a few minutes and remove from heat.

Serve warm and enjoy 🙂

  • 7 oz (200 gr) fava beans
  • salt
