Coffee mousse – Crema di Caffé

Espresso mousse is one of those summer treats that you can’t afford to miss, above all if you are a coffee addict like I am. In general, coffee is more than a beverage for us Italians, it’s a lifestyle, it’s a ritual, and we like to make use of it in different ways, ice-creams and desserts. In summer, when the weather is very warm and you really feel like you need your espresso but  you also want something refreshing, you should know that you can have it all! Sure, you might have a granita al caffè, or a gelato, but if you really have a sweet tooth, why not trying a very nice crema di caffé?

This delicious treat, perfect at the end of a summer meal, has many names in Italy. In Brindisi they call it espressino freddo, then in Calabria they say caffé del nonno, in my hometown it’s simply crema di caffé, but the outcome is everywhere a blend of espresso, cream and sugar, a totally addictive middle way between a soft ice-cream, a mousse and a coffee that will accompany your afternoons on the beach, your after dinner before going out for a wild night out or simply a nice way to refresh a very hot summer day!

The great part of it is the easiness of this recipe. I mean, you barely need anything to prepare it and the procedure is really simple…a good coffee is the point of departure of course, you should prepare it with a moka pot.

Then, a good balance between sweetness and creaminess will make this your next favorite dessert!  The sweetness also depends on your preferences, so if you generally like strong coffee, put more coffee and less sugar.  In this recipe  I use just 5 tsp sugar- which is not much- and 3,4 fluid oz (100  ml) coffee, which is quite a lot. You can put more sugar and less coffee and you’ll have a more delicate result. The consistency should be firm but soft.

So, if next time you have guests you want to surprise them with an unexpected twist, prepare this mousse in advance and share this pleasure with your loved ones!

And now, let’s get started!

 

COFFEE MOUSSE – CREMA DI CAFFE’

 

Ingredients

3, 4 fluid oz (100 ml) coffee prepared with a moka pot (or less for a more delicate taste)

5 tsp sugar (or more, if you like it sweeter)

1 1/2 cup (350 ml) fresh cream

 

Method

First of all, prepare your coffee with the moka pot and let cool.

Add sugar and whisk with a spoon, as the sugar as to melt.

Pour fresh cream in a bowl that you have previously refrigerated and whip it with a hand mixer for a couple of minutes. When it starts to become a little dense, add little by little the cold coffee and keep on whipping until stiff and firm.

Put in the fridge for 1 or 2 hours.

Serve into coffee cups, mugs, glasses and garnish with some coffee grains and chocolate shavings.

  • Step 3 Pour fresh cream in a bowl that you have previously refrigerated and whip it with a hand mixer for a couple of minutes. When it starts to become a little dense, add little by little the cold coffee and keep on whipping until stiff and firm.
  • Step 4 Put in the fridge for 1 or 2 hours.
  • Step 5 Serve into coffee cups, mugs or glasses and garnish with some coffee grains and chocolate shavings.
