Orecchiette with Broccoli and Sausage

Orecchiette with broccoli and sausage is such a tasty dish I wish I could sing a song about it. I mean, broccoli really gives a high five to the sausage and then they go give a hug to the orecchiette…this is how I picture the whole thing. No, I didn’t drink, if this is what you are asking yourself ๐Ÿ™‚ It is just that sometimes I am still surprised about how much the simplest things ever can be so good! Sausage and broccoli is really a great couple, like Ginger Rogers and Fred Astaire, or Bonnie and Clyde!


Together with the orecchiette they form a perfect symphony! Orecchiette – meaning “little ears“, so cute – is the perfect pasta type, for its consistency and the shell shape that traps so well the other elements. These three magical ingredients can give you an authentic Italian experience without spending much money or time. It is indeed a winning choice.

The preparation of this recipe is pretty simple so I don’t have much to add before starting. The only advice I can give is to cook orecchiette in the same water of the broccoli. I learned this procedure in Puglia for another recipe, orecchiette with broccoli rabe. Like this, pasta will be tastier ๐Ÿ™‚ If you wish, you can add a touch of chili, that is really perfect with all the before mentioned ingredients.

One last thought :
Never underestimate the power of these recipes with kids. When i was a child, one of the few ways to make me accept the existence of broccoli was this one!

Orecchiette with Broccoli and sausage

Ingredients:

1 clove of garlic

3 tbs extra-virgin olive oil

half glass of white wine

7 oz (200 gr.) sausage

10 oz (300 gr.) broccoli

7 oz (200 gr.) orecchiette

table salt, to taste

chili pepper, optional

 

 

Method

Bring a pot full of salty water to a boil.

In the meantime, wash the broccoli, cut the stem, break the crown into several florets and transfer them into the pot. Boil for around 5 minutes, covered with a lid, and when it’sย  time, remove from the water with a skimmer. You need to save the cooking water for later.

In the meantime, undress the garlic and remove the skin from the sausage.ย  Cut it into small pieces afterwards.

In a non-stick frying pan,ย  heat the olive oil and add the garlic, whole. When it becomes golden and sizzling, add the sausage and sautee for 2 or 3 minutes, over medium heat. Pour white wine all over and over high flame, let it evaporate. Now you can add the broccoliย  – that you have removed with a skimmer, as previously said – and cook for other 6 or 7 minutes over medium-low heat. Taste it to define if and how much salt you need to add.

Remove the garlic.

In the meantime, when the water in the pot is boiling again, transfer the orecchiette into it and let cook until al dente. Again with the skimmer, transfer the orecchiette in the pan with the broccoli and the sausage, together with a ladle of cooking water and stir well to coat all ingredients with the pasta.

Move into serving plates and sprinkle some good pecorino all over!

    • Yes I really wait for the cold to come to make it, in big quantities and a lot of Pecorino! I like the idea of the anchovies though, I will try next time! ๐Ÿ™‚
