Baked cod fillets with Parmesan lemon and herbs

Baked cod fillets is a very simple dish that can be prepared in a short time, it is light enough to be eaten at dinner and during the week – we leave the excess to the weekend,don’t we? – but it is fancy enough to be prepared when you have guests for example. What I like most about this dish is the combination of tastes, the strong and intense taste of the coating and the softness and lightness of the cod.

Speaking of the cod, it is a white, mild flavored fish low in fat, but fortunately rich in minerals and Omega 3 –  fatty acids that lower levels of cholesterol and triglycerides in your bloodstream.  Its taste is just perfect with sour elements, like lemon for example (I use it in this version). You will see that in the recipe that follows I make a very simple coating, but you can enrich it in many different ways, adding minced anchovies, capers and olives to the breadcrumbs for example. If you are fond of intense flavors you might also put some chili pepper! In summer you might prefer a lighter and fresher taste, then you can add some ginger. Of course aromatic herbs play a strategic role to infuse our cod fillets with different aromas. Choose what you like more, basil for a summer evening, thyme for winter, mint for a nice terrace dinner…fantasy and personal preferences here are more than welcome!

The result is an irresistible tasty meal that is also healthy.
Not only cod fillets are good and light, but the fact of baking them in the oven instead of frying them  allows us to enjoy an excellent meal without adding fat, making this suitable for children or people on diet. You can accompany the baked cod fillets with a light salad, or some potaoes, tomatoes and olives (cooked together with the fillets in the oven).

This recipe is also good if you don’t really love fish very much because maybe you think it is not very tasty and a difficult food to prepare! To make the preparation even easier, I chose frozen cod fillets which are already clean and ready to use. Time to start!

Baked cod fillets with Parmesan lemon and herbs

Ingredients (2 servings)

 

17 oz (500 Gr) cod fillets

1 lemon zest

breadcrumbs

1 oz (30 gr.) grated Parmesan or Pecorino

a couple of sprigs of rosemary, thyme and parsley

table salt, pepper, to taste

2 or 3 tbsp extra-virgin olive oil

 

Method

If you don’t use fresh cod, be sure to defrost it at least a couple of hours before cooking it (or defrost it in the microwave).

Pour  1 or 2 tablespoons of olive oil into a pyrex dish and cover the dish surface with it using a pastry brush. Now you can arrange the cod fillets in the dish, making sure to use one last tablespoon of olive oil to sprinkle their surface.

Grate the lemon zest and put aside. Wash well the rosemary, thyme and parsley and finely chop them.

Preheat the oven at 200 C/392 F.

In a plate, combine together the Parmesan, the breadcrumbs and the herbs. Add the lemon zest and some salt and pepper (depending to your taste) and mix well with your hands or with a spoon.

Now cover the surface of your cod fillets with the mixture and bake in the oven for 20 or 25 minutes. I use the grill for the last 3 minutes.

Remove from the oven and enjoy!
