Farfalle with  smoked Salmon and Truffle Sauce

Very chic choice,  these farfalle with smoked salmon and truffle sauce!  I was wondering how I could impress some people that I had invited, but with the things I had in the fridge as it was a last minute invitation, so I just decided to opt for pasta, to start with –  I have plenty of pasta at home, as you can imagine, my mom sends me boxes and boxes of it every now and then. Don’t ask why, considering that here you easily find it in any supermarket. Mothers in Italy are very worried and concerned about nutrition, as if I moved into the jungle or in the Sahara and my survival was at stake. I sometimes feel very bad telling her that here we feed ourselves as normal humans and that supermarkets work the same way!

Jokes aside, I really have plenty of pasta in my pantry. For this recipe that I improvised using what I found at home – a brilliant exercise, I believe – I chose farfalle, as usual whole wheat, because I think that they get along really well with salmon.

Today’s recipe is really amazing because other than pasta and salmon, it involves cream (not much though) and and white truffle sauce, light and fragrant at the right point. If you are used to think that you can use truffle only with meat or mushroom – based dishes, I can tell you you have many more possibilities! I used to put truffle cream in my piadina with prosciutto, together with fresh cheese, for example, and that is awesome!   Usually you can easily find some great ready-made sauces in the supermarkets which are perfect for making your pasta dishes tasty, elegant and above all original. Try it if you don’t believe me!

So, to go back to the start, I opened my fridge and I found some salmon ( I buy it every week) some truffle sauce that was opened since a while, but still good, and also I defrosted some cream that I had put in the freezer last time I had prepared oven-baked pasta, – it was definetely too much. I was really amazed by the fact I didn’t have to buy anything, as parsley grows steadily on my terrace, and I knew I wanted to use it as last touch. So in half an hour, I prepared something that normally you could ask in a restaurant but that takes a short time  to make with the  maximum joy of your tastebuds!

Farfalle with Smoked Salmon and Truffle Sauce recipe

Ingredients (for 2 people)

 

7 oz (200 gr.) pasta (farfalle or other kinds of pasta are also fine)

3, 5 oz (100 gr) smoked salmon

2 tbsp extra-virgin olive oil

1 onion, peeled, chopped

5 fluid oz (150 ml) cream

2 tsp truffle sauce

salt and pepper to taste

2 or 3 sprigs of parsley

 

Method

In a large pot, bring abundant salty water to a boil. When water is boiling, cook the farfalle al dente– firm to the bite ( usually it’s a couple of minutes before what indicated on the package, but it’s better to taste now and then).

 

After putting water to a boil, start preparing your sauce. In a large non-stick frying pan, heat the olive oil over medium heat and when sizzling, add the chopped onion. Sautee at medium/low  heat for five minutes and add a bit of warm water too if necessary.

In the meantime, cut the salmon in small pieces.

When the onion is wilted, add the salmon and cook for two minutes.

At this point add the cream and stir well.

Add the truffle sauce too (picture here below) and stir to amalgamate. Add some cooking water of the pasta (a ladle) and keep on stirring. Adjust with salt and pepper and let simmer for approximately 10 minutes. Add more cooking water if needed.

When pasta is ready, drain it saving some of the cooking water in case you need it.

Transfer the pasta in the same pan of the sauce,  sprinkle some freshly chopped parsley , and at very low heat, toss well to coat the pasta in the sauce.
